Ribeye Salad
Ingredients:
6 oz. Ribeye steak
1 – ripe plum tomato cut quarters
3 ea. – pepperoncini peppers
2 oz. 5/16th cut French fries, fried crispy
2 oz. ranch dressing
1 oz. blue cheese crumbles
Preparation:
- Toss romaine and
ranch dressing in a bowl
- Cook steak to
desired temperature and julienne and set aside
- Place cooked
French fries on top of romaine in a bowl
- Place julienne
steak on top of French fries
- Sprinkle blue
cheese crumbles
- Garnish with
plum tomatoes and pepperoncini’s

Chocolate
Flourless Torte
Ingredients:
2 lbs dark chocolate
2 lbs butter
2 lbs sugar
2lbs eggs
½ cup chili paste
1 can ancho chilies
4 oz. goden raisins
2 oz. Khalua
Ganache
1 lb dark chocolate
16 oz. Heavy cream
1. Boil heavy cream to a boil and pour over chocolate
2. Whisk together until smooth
Preparation
1. Bring butter to a boil and pour over chocolate and whisk together
2. In separate bowl mix together eggs, sugar and chili paste
3. Add chocolate mixture to egg mixture and mix until combined
4. Pour into greased cake pans and place on cookie sheet or other
cake pan. This helps to to keep the chocolate from burning on the
bottom.
5. Bake at in a 13x17 inch sheet pan at 325º for 35 – 40 minutes
until slightly firm to the touch.
6. Let cool completely until it is firm
7. Un-mold from cake pan
8. Place on wire rack with the bottom facing up
9. Pour warm ganache over torte until covered
